ERBA ROASTED BRUSSEL SPROUTS & BACON WITH BALSAMIC GLAZE

INGREDIENTS FOR 6 SERVINGS:
1.5 pounds Brussel sprouts, trimmed and halved
1 pound cooked crisp bacon
1 bottle Erba Liva olive oil (2 servings = 20 mg)
Salt and black pepper to taste
2 tablespoons balsamic glaze
2 tablespoons grated Parmesan cheese

STEPS:
Preheat your oven to 425°F (220°C).
Cut the bacon into small pieces. Fry the bacon in a skillet over medium-high heat until crispy.
Transfer the bacon to a paper-towel-lined plate, and leave the grease in the pan.
Add the Brussels sprouts to the pan, stir until they’re nicely coated in the bacon grease, and cover the pan. Reduce the heat to medium-low. Cook for 5 minutes.
Toss the Brussel sprouts with one bottle Erba Liva olive oil, salt, and black pepper.
Arrange them on a baking sheet and roast for about 20-25 minutes until they’re tender and slightly crispy.
Drizzle with balsamic glaze and sprinkle with Parmesan cheese before serving.
